Application:

This type of matcha is one of the most expensive, because before harvesting, the leaves are shaded with special sheets for over a week, and the matcha comes exclusively from the first, spring harvest.

Pour 1 teaspoon of tea with 250 ml of hot, but not boiling, water (approx. 70-80°C), then stir vigorously to dissolve the powder and create a foam.

Chasen (茶筅) is a traditional bamboo whisk used to prepare matcha tea in the Japanese tea ceremony. It is an essential tool that allows you to achieve a perfectly foamy and velvety consistency of the drink.

Chasen is an item made from a single piece of bamboo, which is precisely cut and shaped into thin fibers. The number of fibers (prongs) can vary – the more there are, the easier it is to get a delicate foam. The most common variants are:

  • 80-pronged (80 prongs) – most commonly used, ideal for daily matcha preparation.
  • 100-pronged and more – for a fluffier foam, used in tea ceremonies.
  • Chasen with fewer prongs (e.g., 50-pronged) – designed for thicker matcha.

The set includes an 80-pronged chasen, ideal for achieving perfectly frothed matcha.

✅ Shizuoka is the true capital of tea in Japan, accounting for approximately 40% of the national production. Located at the foot of Mount Fuji, this region is characterized by rich volcanic soil, crystal-clear water, and picturesque plantations. The variety of climatic conditions, including morning mists and temperature differences, contributes to the unique flavors of teas such as sencha, tencha, and hojicha. The history of tea in Shizuoka dates back to 1241, making it a place of exceptional tradition.

Why is first flush matcha the best✅

✅ In winter, tea buds undergo a period of dormancy, allowing them to accumulate valuable nutrients before the spring harvest. Thanks to this, first flush matcha is rich in flavor and intense in effect. Leaves growing slowly in cool conditions create a full flavor and aroma, which true connoisseurs will appreciate.

✅ L-theanine, a key amino acid that gives matcha its characteristic umami flavor, is found in significantly larger quantities in the first flush, three times exceeding its content in second flush tea. In later harvests, such as the third and fourth, the level of L-theanine is much lower, which translates into a less intense flavor and nutritional value.

✅ High-quality matcha has an intense, full flavor with minimal bitterness, so it does not require added sugar. To fully enjoy the taste and health benefits, it is worth choosing first flush matcha, which is considered truly ceremonial.

How to recognize good matcha✅

✅ Good matcha is recognized mainly by its color. An intensely green shade indicates a high chlorophyll content and young leaves growing higher on the bush, where they have more access to light. A yellowish tint suggests older leaves or those from lower parts of the plant, which affects lower quality.

✅ The second important indicator of matcha quality is its consistency. The silkier and finer the powder, the higher the quality. This can be easily checked by rubbing the matcha on a white sheet of paper.

✅ The attached photo shows a clear difference between everyday matcha (on the left) and ceremonial matcha (on the right). Ceremonial matcha forms a smooth, intensely green, and continuous line, which indicates very fine grinding. In contrast, everyday matcha has a more lumpy structure and a lighter, less saturated color, making the line less clear and broken when rubbed.

✅ Both types of matcha in our offer are ground on traditional stone mills, but ceremonial matcha is ground longer, which translates into its higher quality and silky consistency.

The presence of bitter notes does not always indicate low-quality matcha, as their intensity depends on the region of cultivation and the breeding technique. However, matcha with intense bitterness or a fishy aftertaste indicates lower quality and a late harvest.

Classification terms

Terms such as "everyday matcha", "traditional", "premium" or "luxury" have been created for marketing purposes and do not reflect the actual quality. The value of matcha depends on the characteristics listed above, which are more reliable.

1. Beginnings and Family Background

✅ Master Nakagawa Kinji was born in Yatsushiro City, Kumamoto Prefecture, Japan. From an early age, he was interested in martial arts – the first of which was kendō, which he began practicing in the second grade of elementary school. Despite a challenging start, his passion and determination led him further and further.

2. Education and Technical Development

⚔️ At around 20 years of age, he began studying the Hoki Ryū school, learning one-handed sword techniques. He then trained Musō Shinden Ryū (Omori Ryū, Eishin Ryū) in Tokyo, and later Toyama Ryū under distinguished masters.

3. Ranks and Achievements

✅ Nakagawa Sensei achieved 8th dan and the title of Hanshi – "teacher of teachers," confirming his supreme mastery. He won numerous awards in competitions and demonstrations, including those for high-ranking practitioners.

4. His Own School – Nakagawa Ryū Battōjutsu

✅ He is the founder of the Nakagawa Ryū Battōjutsu school, which combines traditional Toyama Ryū forms with experiences from other classical schools (koryū). He developed not only combat techniques but also etiquette and forms, emphasizing the fullness of tradition.

5. Philosophy and Approach to Training

✅ For the Master, not only physical abilities but also spirit and tradition are important. He emphasizes the significance of aesthetics, etiquette, and awareness of form – because a true warrior is not just about technique, but also culture and character.

✅ Since 2008, he has conducted seminars and demonstrations worldwide – including in England, the Czech Republic, and many European countries. Thanks to this, his teaching and philosophy have gained international recognition.

7. Importance of Masters and Traditions

✅ Sensei Tokutomi Tasaburō played an important role in his development – a student connected with the original Toyama academy. Through this lineage, Nakagawa Sensei preserves authenticity and a deep connection to ancient samurai tradition.

8. Authority and Mission

✅ Today, Nakagawa Sensei is not only a master of technique but also a leader and teacher of values. As the founder of international organizations, he trains students, organizes events, and transmits the samurai ethos to new generations.
