1. Obscuration Method and Duration

The unique feature of this method is the space between the leaves and the obscuration mesh, which allows for obscuration for over 30 days without touching the leaves. This increases the level of theanine and amino acids that give the drink a sweet taste, while reducing the bitterness of catechins.

Direct Obfuscation
The traditional method involves directly covering the leaves for about 14 days. Although this method is more efficient, it can damage the leaves. Our shelf cultivation provides optimal conditions, allowing for long-term shade without stressing the plant.

2. Drying in the Tencha Oven

Our matcha is dried in a special brick oven, which allows it to retain its full aroma and intense green leaves, even after long-term storage. This means that each cup of tea brings an authentic taste.

3. Removing Stems and Veins

To obtain a pure taste, we remove the stems and veins from the Tencha leaves before grinding them. Only this approach guarantees the highest quality matcha, devoid of bitter notes.

4. Traditional Stone Grinding

Our matcha has an exceptionally fine structure with grains of just 6 microns, which makes its texture smooth and the foam on the surface delicate. This process is laborious, but guarantees the highest quality matcha, ideal for ceremonies.

Machine Grinding
Although modern machines achieve high efficiency, the grain size is as small as 10-15 microns. We believe that only grinding with a stone mill gives the true taste of matcha.
