Origin and quality of the tea

The taste and properties of matcha depend on the region of cultivation. Our matcha comes from Shizuoka Prefecture, which is famous for producing tea with a balanced, slightly sweet flavor profile.

Chasen (茶筅) is a traditional bamboo whisk used to prepare matcha tea in the Japanese tea ceremony. It is an essential tool that allows you to achieve a perfectly frothed and velvety texture of the drink.

A chasen is made from a single piece of bamboo, which is precisely cut and shaped into thin fibers. The number of fibers (teeth) may vary – the more there are, the easier it is to achieve a delicate foam. The most commonly found variants are:

  • 80-prong (80 prongs) – most commonly used, ideal for daily matcha preparation.
  • 100-prong and more – for a fluffier foam, used in tea ceremonies.
  • Chasen with fewer prongs (e.g., 50-prong) – intended for thicker matcha.

In the set you will find a chasen with 80 prongs, ideal for achieving perfectly frothed matcha.

Located at the foot of Mount Fuji, this region stands out for its rich volcanic soil, crystal-clear water, and picturesque plantations. The diversity of climatic conditions, including morning mists and temperature differences, contributes to the unique flavors of teas such as sencha, tencha, and hojicha. The history of tea in Shizuoka dates back to 1241, making it a place of exceptional tradition.

⛩️ Regions of Japan – Kyoto Prefecture – Richness of taste and tradition

⛩️ Uji Tea The Essence of Kyoto

✅ Uji tea, known as Kyoto tea, comes from the picturesque village of Wazuka. It is here that the highest quality matcha and gyokuro are produced. Due to its proximity to Kyoto, this region often supplied tea to the imperial court as early as the 13th century. The plantations in Uji stand out for their rich umami and velvety texture, making teas from this region a symbol of luxury and prestige.

⛩️ Ceremonial Premium Matcha – Japanese Green Tea Powder

✅ Used for centuries during traditional tea ceremonies in Japan, it is the highest quality matcha available on the market.

⛩️ First Flush Matcha

A variety produced from the first spring harvest (first flush). The leaves are shaded before harvest, which minimizes their exposure to sunlight and increases the chlorophyll content, giving the powder an intense green color.

⛩️ Delicate Texture and Smooth Taste

Before grinding, the stems and veins are removed, so ceremonial matcha has a delicate texture and naturally sweet taste. It is thicker than other types of matcha, froths beautifully, and offers a smooth flavor profile with a light hint of sweetness, ideal for tea ceremonies.

✅ Ceremonial Consumption

Ceremonial matcha is recommended to be drunk only with water to fully appreciate its authentic, rich taste and exceptional quality. Despite this, you can still add milk or other additions to it, allowing you to create delicious drinks such as matcha latte, which are gaining increasing popularity.

⛩️Why is first flush matcha the best?

✅ In winter, tea buds go through a period of hibernation, allowing them to accumulate valuable nutrients before the spring harvest. Thanks to this, first flush matcha is rich in flavor and intense in action. Leaves growing slowly in cool conditions create a full flavor and aroma that true connoisseurs will appreciate.

✅ L-theanine, a key amino acid that gives matcha its characteristic umami taste, is present in significantly larger quantities in the first harvest, tripling its content in second harvest tea. In later harvests, such as the third and fourth, the level of L-theanine is significantly lower, which translates to a less intense taste and nutritional value.

✅ High-quality matcha has an intense, full flavor with minimal bitterness, so it does not require the addition of sugar. To fully benefit from the flavor qualities and health benefits, it is worth reaching for first flush matcha, which is considered truly ceremonial.

⛩️ How to recognize good matcha?

✅ Good matcha is recognized mainly by its color. An intense green shade indicates a high chlorophyll content and young leaves growing higher on the bush, where they have more access to light. A yellowish shade suggests older leaves or those from the lower parts of the plant, which affects the lower quality.

⛩️ Another important quality indicator of matcha is its texture. The more silky and fine the powder, the higher the quality. This can be easily checked by rubbing the matcha on a white sheet of paper.

✅ In the attached photo, you can see a clear difference between everyday matcha (on the left) and ceremonial matcha (on the right). Ceremonial matcha creates a smooth, intense green, and continuous line, which indicates very fine grinding. Everyday matcha, on the other hand, has a more clumpy texture and a lighter, less saturated color, so the line when rubbed is less distinct and broken.

✅ Both types of matcha in our offer are ground on traditional stone mills, however, ceremonial matcha is ground longer, which translates to its higher quality and velvety texture.

⛩️ The presence of bitter notes does not always indicate low matcha quality, because their intensity depends on the region of cultivation and the farming technique. However, matcha with intense bitterness or a fishy aftertaste indicates lower quality and a late harvest.

⛩️ Classification terms

Terms such as "everyday matcha", "traditional", "premium", or "luxury" were created for marketing purposes and do not reflect the actual quality. The value of matcha depends on the characteristics mentioned above, which are more reliable.

⛩️ Matcha is not only a delicious tea, but also a source of valuable nutrients such as antioxidants and L-theanine, which support concentration, relax, and cleanse the body.

⛩️Straight from Japan ⛩️

Chasen (茶筅) – traditional matcha whisk

✅ Chasen is a handmade bamboo whisk used to prepare matcha tea in the traditional way. It is an integral part of the Japanese tea ceremony and allows for the thorough mixing of matcha powder with water, creating a perfectly frothed, velvety drink.

✅Natural material – Made from a single piece of bamboo, without the use of glues or artificial substances.

✅ Handmade – Each whisk is carved by artisans, which ensures its exceptional quality and durability.

✅ Perfect foam – The delicate, thin fibers of the chasen make the matcha take on a creamy texture and deep aroma.

To make the chasen last as long as possible, it is worth rinsing it with water after each use and drying it in a well-ventilated place, preferably on a special chasen naoshi stand. ☕✨
