This type of matcha is one of the most expensive because before harvesting, the leaves are shaded with special sheets for over a week, and the matcha comes only from the first spring harvest.

Pour 250 ml of hot, but not boiling, water (approx. 70-80°C) over 1 teaspoon of tea and stir vigorously to dissolve the powder and obtain foam.

First Harvest Matcha

This variety is produced from the first spring harvest (first flush). The leaves are shaded before harvesting, minimizing their exposure to sunlight and increasing chlorophyll content, giving the powder an intense green color.

Before grinding, the stems and veins are removed, giving ceremonial matcha a delicate texture and a naturally sweet flavor. It is thicker than other types of matcha, foams beautifully, and offers a smooth flavor profile with a slight hint of sweetness, ideal for tea ceremonies.

Ceremonial Consumption

Ceremonial matcha is recommended to be drunk only with water to fully appreciate its authentic, rich flavor and exceptional quality. However, you can also add milk or other ingredients to create delicious drinks, such as matcha lattes, which are becoming increasingly popular.

L-theanine, a key amino acid that gives matcha its characteristic umami flavor, is present in significantly higher amounts in the first harvest, three times higher than in tea from the second harvest. In later harvests, such as the third and fourth, L-theanine levels are significantly lower, resulting in a less intense flavor and nutritional value.

How to recognize good matcha✅

✅ Good matcha is recognized primarily by its color. An intense green hue indicates high chlorophyll content and young leaves growing higher on the plant, where they have more access to light. A yellowish hue suggests older leaves or leaves from lower parts of the plant, which translates to lower quality.

The second important indicator of matcha quality is its consistency. The silkier and finer the powder, the higher the quality. This can be easily checked by rubbing the matcha on a white piece of paper.

✅ The attached photo shows a clear difference between everyday matcha (left) and ceremonial matcha (right). Ceremonial matcha produces a smooth, intensely green, and continuous line, indicating a very fine grind. Daily matcha, on the other hand, has a more lumpy texture and a lighter, less saturated color, making the line less distinct and broken when ground.

The presence of bitter notes doesn't always indicate low-quality matcha , as their intensity depends on the growing region and cultivation techniques. However, matcha with an intense bitterness or a fishy aftertaste indicates lower quality and a late harvest.

Terms like "everyday matcha," "traditional," "premium," or "luxury" are created for marketing purposes and don't reflect actual quality. The value of matcha depends on the characteristics mentioned above, which are more reliable.
