How to prepare the perfect matcha with our matcha kit?

  1. Pour 1 teaspoon of matcha into a bowl.
  2. Pour 250 ml of hot water (70-80°C) .
  3. Stir vigorously with the chasen until a delicate foam is obtained.

Origin and quality of tea

The taste and properties of matcha depend on the region of cultivation. Our matcha comes from the Shizuoka prefecture , which is famous for producing tea with a balanced, slightly sweet flavor profile.

Chasen (茶筅) is a traditional bamboo stirrer used to prepare matcha tea in the Japanese tea ceremony. It is an essential tool that allows you to achieve a perfectly frothy and velvety consistency of the drink.

Chasen is an item made from a single piece of bamboo, which is precisely cut and formed into thin fibers. The number of fibers (teeth) can vary - the more there are, the easier it is to obtain a delicate foam. The most common variants are:

  • 80-pole (80 stamens) – the most commonly used, ideal for everyday matcha preparation.
  • 100-pole and more – for fluffier foam, used in tea ceremonies.
  • Chasen with fewer rods (e.g. 50-pole) – designed for thicker matcha.

The set includes a chasen with 80 poles, perfect for obtaining perfectly frothy matcha.

It is recommended to drink ceremonial matcha only with water to fully appreciate its authentic, rich taste and exceptional quality. You can still add milk or other additives to it, which allows you to create delicious drinks, such as matcha lattes, which are becoming increasingly popular.

⛩️Why is first flush matcha the best?

✅ In winter, tea buds hibernate, allowing them to store valuable nutrients before spring harvest. This makes first-harvest matcha rich in flavor and intense in effect. Leaves that grow slowly in cool conditions create a full flavor and aroma that true connoisseurs will appreciate.

✅ L-theanine, a key amino acid that gives matcha its characteristic umami flavor, is present in much higher levels in the first harvest, three times higher than in second-harvest tea. In later harvests, such as the third and fourth, L-theanine levels are much lower, resulting in a less intense flavor and nutritional value.

✅ High-quality matcha has an intense, full flavor with minimal bitterness, so it does not require added sugar. To fully enjoy the taste and health benefits, it is worth reaching for matcha from the first harvest, which is considered truly ceremonial.

⛩️ How to recognize good matcha?

✅ Good matcha is mainly recognized by its color. An intense green shade indicates a high chlorophyll content and young leaves growing higher on the bush, where they have more access to light. A yellowish shade suggests older leaves or leaves from lower parts of the plant, which affects the lower quality.

⛩️ The second important indicator of matcha quality is its consistency. The more silky and fine the powder, the higher the quality. You can easily check this by rubbing matcha on a white sheet of paper.

✅ The attached photo shows a clear difference between everyday matcha (left) and ceremonial matcha (right). Ceremonial matcha creates a smooth, intensely green and continuous line, which indicates very fine grinding. On the other hand, everyday matcha has a more lumpy structure and a lighter, less saturated color, which makes the line less distinct and interrupted when grinding.

✅ Both types of matcha from our offer are ground on traditional stone mills, but ceremonial matcha is ground longer, which translates into its higher quality and silky consistency.

⛩️ The presence of bitter notes does not always indicate low quality matcha , as their intensity depends on the region of cultivation and the breeding technique. However, matcha with an intense bitterness or a fishy aftertaste indicates lower quality and a late harvest.

Terms like "everyday matcha", "traditional", "premium" or "luxury" are created for marketing purposes and do not reflect actual quality. The value of matcha depends on the above characteristics, which are more authoritative.
