Malabar cardamom is one of the world's most expensive spices – surpassed in price only by saffron and natural vanilla, ranking it third in the global premium spice market.

It is characterized by an exceptionally intense, sweet-spicy aroma; its taste combines citrus freshness with a subtle hint of camphor, typical of the green variety from the Malabar Coast.

The seeds can be used whole or ground, and a brief roasting (in a dry pan or in fat) before adding to a dish releases additional essential oils and significantly enhances the spice's bouquet.
