Ceylon cinnamon (Cinnamomum verum) has a thin, multi-layered bark and a milder, more complex profile than cassia. The sticks slowly release their aroma during brewing and cooking, making it easy to control the intensity of the flavor.

What does it go with?

Coffee and tea, compotes, mulled wine, porridges, desserts, cakes, rice, curries, sauces, and stews.

How to use?

Start by adding 1 stick to a pitcher or small pot. Brew or cook for 5–10 minutes, then remove. For sauces and slow-cooked dishes, start with half a stick and increase the amount to taste.

Tip: pairs well with apple, pear, orange, vanilla, cardamom, and cloves.

Storage: in a dry, cool place, away from light.
