Clitoria ternatea tea, also known as Butterfly Pea Tea, is a natural herbal tea with an intense blue color that turns purple when a few drops of lemon or other acid are added.
Thanks to its unique appearance and high anthocyanin content, it is popular in Asian cuisine, phytotherapy, and as a natural food coloring. Whole flowers can be used to make tea, lemonade, jelly, colored ice cream, or "blue matcha tea" after grinding.
