Folk medicine has recommended juniper cones for centuries as a natural aid in the treatment of diabetes and hyperthyroidism. Juniper can be prepared in many ways, including in the form of water extracts, infusions, syrups, as well as wine and even juniper beer.
French cuisine has a recipe for a juniper sauce, perfect for heavier meats like game or duck. Put the juniper seeds in a saucepan, add the wine, cognac, lemon juice, and cook until half the liquid has evaporated. Strain the sauce and serve with the meat.
