How to use the pumpkin seasoning?

• Pumpkin soup: start with about 10 g of the mixture per 1 liter of soup. Add during cooking and adjust the amount to taste.
• Roasted pumpkin: use about 15–20 g per 1 kg of peeled pumpkin. Mix the seasoning with oil and pieces of the vegetable before roasting.
• Risotto and sauces: add gradually during cooking. The mixture can also be used for sweet potatoes and carrots.

The mixture contains 20% salt. A 10 g serving provides 2 g of added salt, so taste the finished dish before adding extra salt, especially when using salty broth.

Serving idea

Roast the pumpkin until the edges are browned, then blend it with broth and the seasoning mixture. Serve the finished cream with roasted pumpkin seeds. A few drops of lemon juice added at the end will allow you to adjust the acidity to the sweetness of the vegetable.
