Lycopene is particularly well absorbed in combination with fat, which is why a greater amount of this compound will be absorbed from tomato sauce or salad with olive oil than from raw tomatoes.

Tomatoes contain, among others: sodium, potassium, magnesium, calcium, manganese, iron, cobalt, copper, zinc, phosphorus, fluorine, chlorine, iodine, carotene and vitamins K, B1, B2, B6, C, PP; as well as pantothenic, folic, oxalic acids and biotin. Sun-dried tomatoes are characterized by an intense aroma and an increased amount of minerals and vitamins.
